Veganism is becoming more and more popular, and at times it’s hard to find a good vegan recipe or to make 2 separate meals for the family if not everyone is vegan. Here’s a vegan loaded baked sweet potato recipe that will leave everyone wanting more—and they wont even realize its vegan!
Vegan Loaded Baked Sweet Potato
Yield: 4 servings
- 4 medium sweet potatoes
- 1 bunch of kale, cleaned and chopped
- 2 cloves garlic, minced
- 1tbl olive oil
- 1 can black beans
- 8pc mushroom ‘bacon’ (get the recipe here)
- Avocado garlic dressing (get the recipe here)
- Sautee pan
- Small sauce pan
Bake the sweet potatoes at 400F until a fork is easily inserted into the middle. There should be no force at all except for the skin.
While the potatoes are cooking, sautee the kale in the garlic and oil until bright green, about 2 minutes. Heat the beans up in the sauce pan with a little bit of water to prevent burning.
When potatoes are done, carefully cut down the center of the potato and push the ends to fluff the middle up. Stuff the kale in the potato first, then the beans. Top with the dressing and bacon last. Enjoy!
