Whether you're already vegan, considering becoming vegan, or just want to eat less meat, this vegan lentil chili recipe is a fantastic dinner! It's so flavorful, you won't even miss the meat!
2 cups French lentils
1 cup red lentils
1 medium onion (about 1 cup chopped)
3-4 large carrots (about 1 cup chopped) (feel free to use pre chopped frozen carrots!)
4 ribs celery (about ½ cup chopped)
1 large can diced tomatoes
1 can of water
¼ cup olive oil
¼ cup chili powder
1 tbsp ground cumin
1 tbsp garlic powder
2 tsp black pepper
Salt to taste
Heat your oil in a pan and add the onions. Saute until translucent, about 5 minutes. Add the carrots and celery and cook for another 5 minutes.
Add a pinch of salt and your spices and cook, stirring constantly for another minute or two.
Add the lentils, tomatoes and water. Bring to a simmer and cook until the lentils are al dente (soft but with a light bite).
You can, after adding the lentils, tomatoes and water, dump it into a crockpot and cook on high for up to 4 hours or low for up to 8 hours.
