Vegan Herb Avocado Dressing
Yield: 2 cups
Ingredients:
- 3 avocados, peeled and pitted
- ½ c parsley, rough chop
- ¼ c chives, rough chop
- 2 tbl rosemary, rough chop
- 1tbl garlic
- ¾ c veganaise
- Salt and pepper
- 1/4c lemon juice
Equipment:
- Food processor
- Air tight container
- Rubber spatula
Combine all ingredients in the food processor and process until smooth. The herbs will be a little chunky, that’s okay.
Scrap out into an air tight container and use on salads, proteins and veggies!
