Summertime means fresh produce, especially as we come into August. Summer squash--zucchini and yellow squash-- is a super versatile vegetable. They’re good for grilling, sauteing, marinating and eating raw, turning into vegetti--low carb and healthy!
Sauteed squash is a simple and delicious side dish for any meal. All you need is squash, some oil or butter, salt and pepper, and some seasonings. Here’s how to do it:
Chop up your squash into half-moons--quarter them if you have too depending on the size of your squash. Heat up up a sautee pan and then add about a tablespoon of butter or oil, depending on how much squash you have.
Add your squash and salt/pepper/seasonings and cook until fork tender.
