Sometimes a crunchy snack is the best snack. Popcorn, pretzels or chips are a usual go to, but often it’s not the healthiest choice. Luckily, you can easily make you own healthy, crunchy snack! Baked veggie chips are easy and cheap to make, plus they taste delicious! You can make them with just about any vegetable you want, from beets and turnips to parsnips and carrots to kale!
Crunchy Veggie Chips
Ingredients:
1 large beet
2 large carrots
2 large parsnips
1 bunch kale
Extra virgin olive oil
Whatever spice blend you choose (click here for spice blends)
Equipment:
Sheet trays
Parchment paper
Tongs
Bowl
Knife
Carefully slice each vegetable into 1/8 inch thick slices. Keep them separate. Clean the kale and rip into medium sized pieces. Preheat the oven to 375F and line the sheet trays with parchment paper. In the bowl, place the beets and drizzle with a little olive oil, about 1 tbsp. Sprinkle with the seasoning of your choice and toss together. Lay the slices out on the tray and bake for 15-20 minutes, flipping over once. Repeat this with the carrots, parsnips and kale. The chis will harden more and get crunchier as they cool. Store in an air tight container or plastic bag.
