French Onion Chicken - Easy and Delicious

Yield: 4 servings
Wine Pairing: a dry white wine goes best with this dish, such as a Chardonnay or a Chablis.

  • 4pc chicken breast or leg and thigh quarters, skin on
  • 3 large white onions, cut in half and sliced
  • 1tbl garlic
  • 1c cream sherry cooking wine
  • 1 rosemary sprig
  • 1 thyme sprig
  • 2c chicken stock
  • 3tbl olive oil
  • 3tbl butter
  • Salt and pepper to taste

  • Sautee pan
  • Tongs
  • Glass baking dish

Preheat over to 350.

Heat oil in the pan. Season chicken with salt and pepper and place skin side down in the hot oil and sear the skin so its crisp. Remove and set aside.

Using the same pan with the oil and chicken drippings, add the butter and melt. Add the onions and cook until more color forms on the bottom of the pan and on the onions. Do this until the onions are caramelized, stirring often to prevent burning. Add the garlic, rosemary and thyme and cook for 2 more minutes.

Deglaze the pan with the cream sherry and reduce by 2/3. Remove the rosemary and thyme. Pour onions and remaining liquid (including the stock) into the bottom of the baking dish. Place chicken on top and cover with foil. Bake at 350 for about 25 minutes or until done (internal temperature is 165F).

Serve this dish in your coach or outdoors beneath your RV awning. No need for candlelight with G-Lite by the Girard Group to make this a fine dining experience!
