Coconut Curry Chicken

 

Coconut Curry Chicken is a fantastic way to switch up chicken and rice night! You can make it spicier by adding dried chili peppers! 

 

What you’ll need: 

1 can coconut milk

2 chicken breasts, sliced

1 onion, chopped

2 tbsp oil

¼ cup red curry paste

½ cup chicken stock

1 tsp cardamom

1 tsp coriander

1 tsp cumin

1 tsp cayenne

1 tsp whole mustard seeds

 

Heat the oil in a pan and add the onions. Sautee until translucent. Add the chicken and cook through. Add the spices and curry paste and cook until very fragrant, about 2 minutes, stirring constantly. This will also be when you add your chili peppers if desired. Cook those for about 2 minutes as well to help deepen those flavors and bring out any oils. 

 

Deglaze with the stock and add the coconut milk.if you want it to be spicier, Cook for another 20 minutes. Serve over rice.
