Bleu Cheese Smashed Potatoes


Mashed potatoes can be a lot of work with peeling and chopping and whipping them up, plus we have them so often throughout the year. Smashed potatoes are a fantastic alternative and you don’t need to peel the potatoes! You can add just about whatever you want to them too, from goat and bleu cheese to garlic and onions to sour cream and butter! They are a great side to almost any meal and super versatile.

If you really want to make these potatoes stand out, garnish them with some warm crumbled bacon bits! It will add more texture and, of course, more flavor! 

Bleu Cheese Smashed Potatoes

Yield: 6-8 servings


5lbs Yukon gold potatoes

8oz bleu cheese, crumbled

½ cup whole milk

2 tbsp chives, finely chopped

2 tbsp garlic oil

¼ cup butter

Salt and pepper to taste

Start by cutting the potatoes in half or into quarters based on size. We want the potatoes to cook evenly. Boil the potatoes until they are fork tender, then drain. While you are cooking the potatoes, warm the milk up and melt the butter into it. You can add the oil to this as well.

Fine chop the chives and set aside. After you strain your potatoes, place them back into the pot and start to smash them with the ricer. Add some salt at this point, as well. Pour the milk, butter and oil mixture in and continue to mash. Add the pepper and more salt to taste.

After you have everything mixed in, use the spoon to add the bleu cheese and chives and carefully fold them in. Serve!
